One of the things about Handbreak that turned me off was the inability to
rip a DVD directly into an audio format like mp3, or M4A, etc, thus making
me then have to use Switch, or something to convert the movie file to a
plain audio file with no video included. Will ripit let me do all this from
within its own app, the rip, and audio conversion/video stripping?

Ripit is the easiest. Just take the defaults and you should be fine. I
don't change much in ripit.
