Here's some explanations and solutions to your problems. 1. When the alert pops up asking whether you want to change all future events or only this event, you can navigate to it by opening the window chooser menu. You do this by either pressing VO-F2 twice quickly, or by doing a two finger double tap on the right side of the TrackPad.
2. When selecting days of the week for a repeating event, the checkbox is checked whenever you move the VO curser to it. So, you need to tab through once and uncheck all the checkboxes for days on which you don't want the event, but don't go back and double check because you'll re-check the checkboxes.
