Hi there,

To be 100% honest, I'd get a free text editor called Bean. It's not available 
from the app store, however, but you can download it from the following link:
http://www.bean-osx.com/Bean.html

It's completely accessible with VoiceOver, and is vastly superior to Pages in 
my opinion, since there's no way to see what page you're on in a document as 
far as I can tell. With Bean, it will tell you what page your on, or at least 
shows you somewhere.
As far as the double spacing goes, I'm not quite sure how to do that, since I 
don't use Pages.
