Hi, I know that this question came up for how to add someone to your VIP folder for Mail on the Mac, but I find this easier to do when I read messages on my iPhone. I flick left to the "address button" for the sender and double tap. Then I move to the last element on the "Sender" screen, which is "Add to VIP", and double tap.
