Hi, In the Songs view, it should automatically be in List view unless you have the Column Browser enabled. Make sure that the Column Browser is not enabled and you should be able to sort as mentioned when in that view. When in Playlists, the List view option is within the View menu that is just to the right of the Shuffle button on the main iTunes screen.
