A lot of the time shift down arrow works for selecting line by line, then 
command-c to copy.

If you interact with the text, then the voCommand VO-return may work.  That all 
put in select mode, use VO-right arrow to begin selecting.  Hit VO-return when 
you are done, then command-C to copy.

A third way, is if voiceover reads out a line of text, you can then hit 
VO-shift-C to copy the last phraise to the pasteboard.  Becareful with this 
method, because everything voiceover says is coppied.  For example, "heading 
level 3 who let the dogs out."

The heading level 3 would be included in that copy.
