Well, your friend could buy music or other media from the iTunes Store on their 
iOS device, then it would be downloaded directly to their device. They can get 
audiobooks from audible, books from BookShare etcetera.

They could also use Dropbox or some other cloud syncing app to get media on to 
their device. They might also be able to use PhoneDrive to transfer media on to 
their device.

I think their life might be made a fair bit easier though if they just learned 
to use iTunes. It's not as easy on Windows as it is on the Mac, but it's 
useable. Basically there is no way to just view your iPhone in Windows Explorer 
and copy and paste media on to it as you might do with other smart phones. But 
hopefully the alternatives I mentioned above will be sufficient.
