Angus: First, I believe the command that you want for keyboard help is voiceover Kate, E. G. Control option Kay.This will give you the keyboard help that you desire. I order to move items to the trash, use command backspace. Simply backspace won't do it. When you need to retrieve something from the trash, In most cases, the easiest way to do this is from the dock. Let me know if you need more help with the dock.
