Hi, Jean. I can at least answer your first question about how to extract yourself from an edit field. If you tap anywhere on the screen outside of the keyboard, your cursor should flip to that area, and voiceover should start reading from that point. At that point, a right or left gesture should help you navigate.
As far as the at symbol, on the iPhone's virtual keyboard, it usually appears to the right of the , when it is included with characters. If in the symbols mode of the virtual keyboard, it is located on the right-hand middle, by the! An apostrophe. I agree, it's a pain to hunt out sometimes. On a standard keyboards, as I'm sure you know, it is a shift of the number two key. I do not know if or why this would change on a Bluetooth keyboard. Hope this helps. Be well.
