I think I have figured out a workaround until Apple fixes it. It's not true 
that you can't edit the thing although it does appear that way. When I went 
into the name field voice over didn't tell me that I was moving between 
insertion point at start or insertion point at the end. I tried this twice, and 
here is what I think I have figured out.

Voice over is just not telling you what is what. It appears that if you double 
tap on the name field, that you end up automatically at insertion point at end. 
When I did it, voice over said insertion point at start every time, but that 
was not true all the time, I think. So for now, you can just assume that you're 
at the end and delete character by character. I could not get into the edit 
field where you could take out the whole thing if you wanted to without doing a 
character by character deletion. However, I was successful at editing the field 
although not normY like we're used to.
