Hi,

I’m confused as to why you’re using iTunes to deal with photos.  iTunes can be 
used to sync photos to your iDevices but I believe that you should set up the 
albums or events you wish synced from within iPhoto first then simply sync the 
specific items.

Not sure if that was the direction you were going, but hopefully it helps some.
