you change the extension of a file in the same edit field as you change the name. By default, as soon as you hit enter to rename, only its name will be selected so when you type that’s what’ll get overwritten. But you can just move to the right to the extension, then backspace over it and type in a new one. Finder will then prompt you if you really want to change it, you say yes and there you go.
