You can't. This is the VoiceOver cursor and helps partially or fully sighted people who are working with you. It can also enable a partially or fully sighted person to use VoiceOver or just help you out along the way. As you move along the screen with a swipe or a single tap the box shows what's selected at the time. Be it a cursor the box moves as you navigate the screen.

Hi.
My wife was looking at my screen last night, and she mentioned that I have a
box tracking the cursor. I cannot find anywhere to turn this off. Can
someone suggest a starting place? Thanks.
