xterm: http://maemo.org/downloads/product/osso-xterm-advanced

ssh: I use OpenSSH myself, which is not straightforward to install, and
comes in a single package that bundles the server and the client.

This page describes the trick needed to install OpenSSH:

Also, if you choose to install it, make sure you ssh to localhost as
root and change the default root password ('rootme').

An alternative to OpenSSH is dropbear. I haven't used it myself, so I
cannot help you there.

Most of it. You won't find a repository with all 16000 Debian packages
in it, ready to be used on an internet tablet.

Although you sometimes can download a source package from Debian,
rebuild it for the armel target in scratchbox, and install it on your
tablet.
