There are a number of ways to do this and perhaps IM is not the one 
most suited to your needs. I use a Perl module ExifTool for metadata 
extraction which provides the data in structured way that is easy to 
manipulate.

The IM (6.2.4) way would be

To extract a profile, the -profile option is not used. Instead, 
simply write the file to an image format such as APP1, 8BIM, ICM, or 
IPTC.

For example, to extract the Exif data (which is stored in JPEG files 
in the APP1 profile), use.

convert cockatoo.jpg exifdata.app1
