That is because at this time the two are the same variable!!!!
I have been suggesting that these two functions while related
should be separated. That is add -alignment, which if unset
falls back on gravity.

| doesn't work in multi-line mode (see my last posting). Any solutions, anyone?

As for what you are doing. do the paragraph centering first
turning it into an image, then horizontally append it with your image.
On the command line that would be...
convert -gravity center label:'This is\na centered\nparagraph' \
rose: +swap +append x:
