There is a note in fine print below the example. It explains:
Note that the "-size" setting must be reset to either "-size 0x0" or turned off with "+size" before we read the JPG image. This setting is passed to the JPEG library during the image file reading to limit the size of the image read in. As such it will cause the "dragon.jpg" to be read in as a much, much smaller image (usually just larger than the size hinted). Resetting this setting will ensure it is read in at its full, normal, size.
