I think because the functionality is allowing you to view more options and it is a toggle between show/hide, the eye icon would be a good option. It's consistent with other applications where you are showing/hiding certain features.
The default could be the eye with the slash, to indicate that there are some elements that are currently hidden from view, prompting the user to investigate what could be seen if they changed this setting.
