        I finally understand what I've been doing wrong: in testing these
suggestions, I have not been entering syntactically valid email
addresses into the recipient fields.  For instance, if I just type "blah"
into the "To:" field and hit enter, I still get the address book trying to
expand.  If I enter [EMAIL PROTECTED] and hit enter, it does indeed add a
new field.

        This behavior still doesn't seem ideal to me --- I'd like to be able
to add a new blank recipient field by pressing enter inside an existing
blank recipient field.  But at least I understand what's going on now!
