The 'Addresses' pane in the preferences allows you to enter your email
address(es) so that they are excluded from the replies.

You should build a filter that marks those (or all) messages read and
apply this filter on the 'Sent Mail' folder.

Doesn't the 'text-only' viewer fit your need? In the 'View' menu, look
at 'Viewer to use'. But I may have missed what you really want...
