OK, I got this to work.
To forward mail to [EMAIL PROTECTED]
the solution was rather naturally
${header:[EMAIL PROTECTED]
However I believe I have discovered a user interface
problem. If you use the template editor, there is I think
no way to specify the header fields. The menu for "message
headers" misled me: this is just quoting the message headers
in the text.

PS I do not see why the hyphen must be escaped in this
context. I also had to discover this by trial and error:
