 This is not really relevant to your question but let me say that it's
probably not a good idea to use M with POP3 servers. Support for them is
notionally there, but M is an IMAP client first and foremost and I must
have last tested POP3 in the last millennium.

 Actually, the options are a superposition of the folder settings and
identity settings and normally the latter should overwrite the former.

 What definitely works -- as I sometimes use this myself -- is to have
several identities with different SMTP servers and select the one you want
to use explicitly in the combobox to the right of "From" address in the
composer window. Did you try to do it like this?
