Here are the headers sent with the subscriber's email address changed to 
firstl...@school.edu<mailto:firstl...@school.edu> and our BCC mailbox domain 
changed to COMPANY.com.

Are these all the headers? If so, you need a To: header. sending the envelope to the list-join address is not sufficient. The message must either have a To: to the list-join address or a To: to the list-request address with a Subject: or body of `join`
