Header rewriting (ugh!) in the MTA which directs the mail to Mailman (or via procmail) would be one way. Mailman source code changes (ugh!) would be another. Duplicating the entire set of u.arizona.edu addresses as email.arizona.edu (set to no mail) would be yet another (UGH!).
