You can't scramble all e-mail addresses that appear in the messages that are sent out, because then users couldn't reply, misconfigured MTAs might reject the messages as spam, etc.... The best you can do is to protect the archives, which Mailman does by default.
However, Mailman also usually provides a link to the full mailbox with addresses that have not been protected, and that problem is addressed at <http://www.python.org/cgi-bin/faqw-mm.py?req=show&file=faq04.034.htp>.
If this function exist, how is it turned on, and is it possible to have it scramble e-mail addresses in old archives?
From the main web admin page for your list, go to the "Privacy options..." page. Scroll down to the bottom of the page, and make sure that the last radio button is set to "Yes". It has the description "Show member addresses so they're not directly recognizable as email addresses?" If this needs to be corrected, then do so and click on the "Submit Your Changes" button.
If you want something more than what this option provides, you'll need to make source code modifications to Mailman in order to obtain your desired results. If you go that direction, we would appreciate your contributing those changes back to the project.
