This is referred to as "reply-to-munging" and yes, you can do that in Mailman. Go to your list administration general options page and change the reply_goes_to_list setting to "List" (it defaults to "Poster"). You can also set the first_strip_reply_to setting to yes if you want to remove any existing reply-to headers but I personally do not see much point in doing so. There are a lot of people who argue that the default setting for Mailman is the "right" way to do it, personally, I disagree. I'm not going to argue this issue because I seem to be very much in the minority but I will say this one thing: If a list is set up as a discussion list, then reply-to munging is the easiest way to keep discussion ON the list.
