First, your members can do this for themselves, and I for one encourage them to do this. They can simply change these in their options page for one of the lists and then choose to change it globally. Unfortunately, there appears to be some restriction that prevents a list admin from doing this. I vaguely recall that there is a work-around for this, but can't recall it right now. I'm sure someone will mention it if there is.
