I read again and again that MailMate uses the Sent folder to keep track of addresses, but I never have any messages in my Sent folder, and it still seems to do just fine. For example, it automatically used my mailmate address when I composed this message, although I only use it for messages to the list, and the address doesn't appear in the To: line of the message I'm replying to. If I'm missing any sort of functionality by not using my Sent folder, I can't tell what it is.

In MailMate it works in the opposite way. Every message in your Sent Messages mailbox represents one or more previous recipients. What you need is some way to blacklist some of these, but that is currently only supported implicitly. You simply have to move these messages out of your Sent Messages mailbox. Alternatively, you can change the mailbox MailMate uses to find previous recipients. That way you could actually imitate what Mail.app does. (And yes, it would be nice if MailMate had some default behavior which made it easier to either do black- or whitelisting of previous recipients.)
