For some reason I can add multiple lines, but after it’s formatted it
still appears as a single line space.

⌥-space will force a blank line.
Is there a problem with just adding a blank line to the top of the
signature? I don't use signatures all that much, but that works for
me. For example, the one below starts with 2 blank lines, as of a few
seconds ago...
