MailMate logs if you keep the Activity Viewer (⌥⌘0) open.

Have you perhaps enabled the `SMTPUTF8` hidden preference described [here](https://manual.mailmate-app.com/hidden_preferences#internationalized-email)? (Note my emphasized comment about the feature.)
