That should very rarely happen, but it's possible that the emails lack the headers needed.
Try selecting one of these emails and use “Message ▸ Reset” to force MailMate to forget and refetch the email. Is the date then still missing?
Other than that I'm finding mailmate much more useful than mail.app even with mailbutler and mailtags and mail act on
