It sounds like you might have enabled the “Prefer Plain Text” option in the Viewer preferences pane. This controls what is shown by default.

Yes, that was it, thank you. I must have thought that was for composing, even though it’s clearly in the viewing pane.

Also note the “View ▸ Message Body Parts” menu for ways to switch between which part is displayed for a given message.
