You can create a smart mailbox showing emails older than x days. Removing the attachments is probably one of the few things that work better in the (otherwise very similar) 2.0BETA: https://updates.mailmate-app.com/2.0/archives/MailMate2Beta.tbz
Then look for “Message ▸ Remove Attachments”.
Short of that, if I delete those messages will the attachments get deleted as well?
