I don't understand this, but... I hadn't touched < ~/Library/Application Support/Mailmate/Resources/Special.plist > in months, but when the custom keybindings broke I took the occasion to update that file — and introduced a typo (a missing quotation mark in one line). So I don't see how that could be the cause, but fixing that typo along with the usual diddling — dis/enabling the keybindings option, restarting a few times, etc — seems to have fixed it. ¯\_(ツ)_/¯
