I didn't test, but I think if you want to change the default search
scope you can set it using a hidden preference like:
defaults write com.freron.MailMate MmDefaultSearchScope -string "from"
Myself, I'm using the default search scope and switch the scope using
the search syntax and simply start my search using "f " to search using
the "from" scope like:
f "Guillaume Barrette"
