True, the headers need to be legible as demanded by the protocol, back in the days when the internet only seemed to need ASCII. The body is a different matter and has almost always required some form of encoding, though this has much to do with images, etc. as it does with character pages.
Still, that SMTP is still working nearly 50 years on, shows how important protocols and interoperability are: I wonder how many of the various messenger systems will still be with us in 50 years…
