This really isn't a mailmate solution, but it works best for me after being a 
bit frustrated with how MM handles things: I use a shortcut expander (in my 
case, Alfred) for signatures. That way, I can decide if/when to use them, and 
which. As little as 2 characters at the end of any email will do the trick.
