Once you have entered the email address and it is in a blue bubble, there is a little “v” at the far right of the address that will activate a pull-down menu. One of the menu options is to “Add [address] to Blacklist”, which will prevent the auto-complete from using it in the future.
Note that there is no convenient “undo” for this operation. If you accidentally blacklist an address, you’ll have to manually edit the related .plist file to remove it.
