I'll toss in another suggestion you might consider: use Thunderbird and
its Local Folders.
Connect Thunderbird to your IMAP account in the usual way and let it
sync. This will take a while if you have a lot of mail. Create as many
sub-folders of Local Folders as you want. Be sure to double-check the
Retention Policy in the properties of the local folders. Select messages
from the IMAP account and move them to one of the local folders.
The messages will be stored in
~/Library/Thunderbird/Profiles/<profileID>/Mail/Local Folders.
