Apparently Amazon SES _does_ do dedicated IPs (such as is the
expectation here), but in a way that is not detectable from the
outside (from anything else but the eventual fact that the IP X
only ever sends mail for customer Y).

Being able to set your own rDNS for dedicated IPs sounds like a
very basic ESP requirement that Amazon SES has not even thought
of implementing yet, for reasons that we can only guess at.
