pain indeed it is.
mail-in-a-box (https://mailinabox.email/)
uses the same painful dovecot.
or Stalwart
while it looks interesting, it suffers the same power-imbalance as
Dovecot at the licensing terms: "open source" is merely a strategic
on-ramp to the sort of vendor lock-in that comes when a developer has
more control of the software than anybody else. Same licensing defect
as Dovecot. Same expected evolution over time, just fancier marketing
and newer programming language / more modern feature set.
I migrated from Cyrus IMAP to Dovecot a dozen years ago. I don't have
notes documenting that decision, but I am certainly tempted to migrate
from Dovecot back to Cyrus IMAP for my small legal practice.

neat. what I find more painful (counterintuitively) is the automated
configuration, catering to cloud providers and MTA's like Thunderbird
that are all becoming the same Einheitsbrei (apology to non-German
speakers, that terms just captures perfectly the tasteless, odorless,
undistinguishible mushy and uninteresting stuff that they are all
becoming). The reason to not use big tech service is certainly not to
be like them. Aim to be better, at least you will be different.
