Hi Dan, I tried to duplicate the problem, but I detected no problems editing the list of recipients: Make sure you use Gmail 2 (the new Gmail with colored labels, video chat). As far as I remember Gmail 1 had problems editing addresses.
If you still experience problems, please send me a screenshot with the broken address entry.
