After some searching it seems that it is a Acrobat limitation (see
conversation below).
Workaround:
When you are inside Acrobat drag the little icon next to the document title
to the Mailplane dock icon or an open Mailplane window.

Thunderbird is not recognized, as the preferred mail client when attempting
to use the SendMail function from within Adobe Acrobat 5 or 6. An error
message is generated, indicating that, "The SendMail doesn't know how to
talk to your preferred mail client. Please select a different mail
application to use from the Internet control panel.

The same error with Acrobat 7. Makes it very awkward with 7's new "Send by
email for review" function. If so inclined, T'bird users should go to
http://www.adobe.com/support/feature.html to register discontent.
