Hello Quintin, It's quite easy (if you know how to do that !) ! Quit Mailplane, first of all !
In the finder, do a right click on Mailplane, and select "Get info". In the "Get Info" window, you should see a "languages" list, uncheck all the languages you don't want to use and keep checked the language(s) you want to use. Finally, restart Mailplane. HTH.
