The HTML signatures only work in "rich text" mode, this is probably the problem in your case. Based on the current "From" email address, the signatures are inserted automatically. The Mail > Insert > Signature menu item doesn't do anything at the moment. Next update will bring it to live, though: It'll allow you to replace the current signature with another one.
