Check out OmniFocus, a quite wonderful GTD task manager. There is a
free plug-in for MailPlane that allows you to capture emails or
portions of emails in OmniFocus actions. Each action has whatever
title you decide to give it (with the message subject being the
default). Whatever part of the email you highlighted is quoted in the
action's note, along with a link back to the email itself. You can use
the same task manager (OmniFocus) for your email and all the other
task management you need to do. It's great to have everything in one
location.

OmniFocus is not free, but it's not terribly expensive, and it's
really well designed. There's an iPhone app, too, which can sync with
your computers through WebDav or Mobile Me, or you can sync through
your local wifi.
