I'm no expert, but from what I recall, those are flags set in IMAP, but for some reason google either clears them or doesn't save them, at least in my experience. If I send a reply from the iOS mail app, the arrow will show up, but when i go back later, the arrow will be gone. And of course replies made within gmail's web interface won't show an arrow in Mail at all, because google doesn't set that flag.
