Here is an additional feature request for your already awesome evernote integration. In the future it would be great to have a submit to evernote with a "remove formatting" option.
People have been asking for this from the Evernote guys for notes in the first place for a couple years now, but nothing has been done. Especially with gmail a current issue is if you are adding a large conversation you are clipping to evernote then you are getting all the gmail borders and reply buttons. So my current work around with evernote has been to cut/paste it into textmate and then paste it back into evernote. Annoying that evernote doesn't have this by default.
