Apologies for the late answer.
You can define signatures in two places.
1) Gmail > Mail Settings > General > Signature. You can disable this signature
by setting it to "No signature"
2) Preferences > Accounts > Signatures. To disable it, please uncheck the
"Enable Signatures" setting.
