Thanks for the feature request: I agree, this would be a nice addition. Currently, you can use Mailplane's signature feature to add multiple signature for the same 'from' email address. Mailplane will insert the signature marked as 'default', but you can switch to another signature using the 'Mail > Insert > Sigature' or Command-Option-S keyboard shortcut.
